Tasting Notes

Subtle yet expressive from the outset. Baked lemon and citrus oil layered with pronounced chalk and cool stone. The fruit is clean and vibrant, never heavy, carried by a airy acidity that feels both precise and weightless. Deeply mineral, with a saline, chalky grip through the mid-palate. Exceptionally elegant and long, unfolding beautifully with air. After double decanting and 2–3 hours of bottle aeration, the wine gains depth and clarity without losing tension. Perfect match together with fresh scallops, caviar, limezest and white soy.
